Can you believe Summer is almost over with? There's still a month to enjoy those Summer vegetables too! Pretty soon it will be Fall and all you'll see on food blogs are pumpkin recipes. Not like there's a problem with that. 🙂

I do enjoy a good Cobb Salad from time to time. My favorite Summer veggies are cucumbers, corn on the cob, and tomatoes and they go great in this salad. Do you want to know a trick I learned? I usually cook my bacon in the oven at a high temp around 400 degrees so that the bacon gets crispy.

Leave a little extra bacon grease on the sheet pan and rub it around on the corn on the cob. When the bacon fat has cooled down a bit of course. Don't want to burn yourself! Extra FLAVOR. Who doesn't want bacon fat on their corn on the cobb? I wouldn't mind that along with some butter slathered all over that corn. Mmmmmm.....

INGREDIENTS

  • 2 cups of Romain lettuce or any type of lettuce you prefer
  • ¼ cup of cucumbers, sliced
  • ¼ cup of cherry tomatoes, sliced
  • ¼ cup of corn - frozen, canned, or from the cobb!
  • 1 slice of bacon, chopped
  • 1 ounce of reduced fat colby jack cheese or fat free cheddar
  • 1 hard boiled egg, sliced
  • 1 ounce of rotisserie chicken, or breaded chicken strips (you can make these in the air fryer as well)

How to Air Fryer Cobb Salad

  1. Prepare the bacon: Place some strips of bacon in the air fryer basket at 400 degrees. Cook the bacon for 8 to 10 minutes or it’s golden brown and crispy.
  2. Make some hard boiled eggs: Place the eggs inside the air fryer basket. Set the timer to 250 degrees and the time to 16 minutes. After the eggs are done cooking place the eggs in an ice water bath. After a few minutes peel them open and slice them for salads.
  3. Combine all ingredients together in a bowl and serve with your favorite dressing.
  4. You can use whatever type of corn you like for this. I baked my corn on the cob with the husks off at 400 degrees for 20 minutes. Flipped the corn over after 10 minutes and put them back in the oven.
