Best Banana Bread Recipe (1)

One of the great things about making homemade banana bread is its versatility. You can add nuts to my banana bread recipe or your favorite chocolate chips to make chocolate chip banana bread.

The origins of this moist banana bread recipe can be traced back to the Great Depression. Nothing was wasted during that era. Ingredients were scarce, and you couldn’t afford to throw overripe bananas away.

Best Banana Bread Recipe (2)

The soft crumb and buttery texture of my easy banana bread recipe lets the rich banana flavor of this cake shine through.

A reader asked if bananas could be too ripe to make a loaf of banana bread. Bananas should have plenty of brown spots and can be completely black. The riper the banana, the sweeter it’s going to be, and the more intense the flavor will be.

Let’s start by gathering the ingredients we need to make traditional Banana Bread. In Chef Speak, this is called the “Mise en Place,” which translates to “Everything in its Place.”

Not only does setting up your ingredients ahead of time speed up the cooking process, it also helps ensure you have everything you need to make the dish.

How to make Banana Bread

  • Prepare a 9″loaf pan with butter and flour (or pan spray).
  • Preheat the oven to 325 degrees F.

  • Add the all-purpose flour, salt, baking soda, and baking powder to a small bowl.
  • Whisk the dry ingredients together until well blended
  • Add the melted butter and sugar to a large bowl.
  • Mix until well combined.
  • Add the eggs one at a time to the butter mixture.
  • Whisk until completely blended into the mixture.

*You can use a stand mixer or hand mixer to make this recipe.

Best Banana Bread Recipe (5)
  • Peel 4 medium-sized bananas.
  • Mash the bananas with a fork.
  • Add the mashed bananas to the wet ingredients.
  • Mix until well combined.

*Don’t think that adding extra bananas will make this recipe extra delicious. Using more or even large bananas will only result in problems with the recipe.

Best Banana Bread Recipe (6)
  • Add the raisins, walnuts, and vanilla extract to the banana mixture.
  • Mix until well combined.
  • Add the flour mixture to the wet ingredients, one-third at a time.
  • Mix until each addition is just mixed in. Don’t overmix.

Other flours can be used in this recipe. Whole wheat flour and almond flour are two that I have heard worked well with this recipe, but it’s something you’ll have to experiment with to come up with the right proportions.

Best Banana Bread Recipe (7)
  • Pour the batter into the greased loaf pan.
  • Place the loaf pan on the center rack of the preheated oven and bake for 60-70 minutes or until a wooden toothpick or cake tester inserted into the center of the loaf comes out clean.

Place the pan on a wire rack to cool for 15 minutes. Then remove the delicious banana bread from the loaf pan.

Best Banana Bread Recipe (8)

This is my favorite way to use up leftover bananas, and after one bite, I know you’ll agree that this is the best banana bread recipe you’ve ever tried and is sure to become a family favorite.f

I like to make two loaves of this easy recipe and freeze one for another day. You can keep the bread frozen in an airtight container for up to three months.

Chef Tip:

Don’t have enough bananas? Freeze them until you have enough or have the time to make this quick bread. I suggest peeling them before freezing it will make things a lot easier.

Can I make banana bread without eggs?

Yes, you can make banana bread without eggs. Use applesauce, yogurt, or flax eggs as an egg substitute. Keep in mind that the texture and flavor of the bread may be slightly different.

Can I freeze Banana Bread?

Yes, you can freeze banana bread. Wrap the bread tightly in plastic wrap or aluminum foil, then place it in an airtight container or freezer bag. It can be stored in the freezer for up to 3 months.

4 medium sized bananas are about 1.5 cups. It shouldn’t take that long, something is definitely wrong

FAQs

What is the formula for banana bread? ›

Mix in a bowl 3 ripe bananas, well mashed, and 2 eggs, beaten until light. Sift together 2 cups flour, 3/4 cup sugar, 1 teaspoon salt, and 1 teaspoon baking soda. Add to the first mixture. Add 1/2 cup nut meats, chopped.

Can you put too much banana in banana bread? ›

Banana bread recipes typically ask you to use overripe bananas so that they're easier to mush. This means it's tempting to toss all your bananas into the mix when you're ready to bake, to avoid food waste. But if you add too much of the fruit into your batter, your bread could turn out mushy, heavy, and wet.

Why is my banana bread dense and not fluffy? ›

You Over-Mix the Batter

For soft and tender banana bread, gently stir the wet ingredients into the dry — don't overmix! The more you stir, the more gluten will develop. The result will be a tough, rubbery banana bread. Simply stir until moist, and then do no more.

How do you keep banana bread moist when cooking? ›

The olive oil will make any bread cake moist. Other things I do for my banana bread are adding a little molasses, just a little bit more sugar and vanilla flavor and more bananas. I usually let it cool a little and then wrap it in aluminum foil. I find when I add apples it makes my breads and cakes very moist.

Is baking soda or powder better for banana bread? ›

Baking soda works best in conjunction with an acidic ingredient. In the case of banana bread, this may be buttermilk, brown sugar, molasses or the bananas themselves. Recipes generally include just enough baking soda to balance the acidity in the batter.

Why baking soda in banana bread? ›

Baking soda: Baking soda acts as a leavener, which means it helps the banana bread rise. Salt: A pinch of salt enhances the overall flavor, but it won't make the loaf taste salty.\

How many bananas is 2 cups? ›

2 bananas: 1-1/3 cups chopped | 1 cup mashed. 3 bananas: 2 cups chopped | 1-1/2 cups mashed. 4 bananas: 2-2/3 cups chopped | 2 cups mashed.

Is it bad to use overripe bananas for banana bread? ›

Brown, overripe bananas are sweeter because in the ripening process the starches in the banana are converted to sugar. You can even use super-soft, black bananas that have a really strong smell and are oozy inside. As long as they're not moldy, there's no such thing as too-ripe bananas for banana bread.

When not to use bananas for bread? ›

Mold on bananas is fuzzy white, gray, or greenish—it looks a lot like mold on bread. If a banana smells rotten or fermented or is leaking fluid, it's time to say goodbye. If the fruit inside, not just the peel, is black, that's a sign that your banana is too far gone to safely eat.

Why is my banana bread raw in the middle? ›

It can take 15 minutes to properly preheat some ovens. If your oven has not reached the correct baking temperature before the banana bread is placed in the oven, the banana bread will be undercooked and more likely to sink.

Why did my banana bread come out gummy? ›

Check your oven to make sure it really is showing the correct temperature that you set it for and another thing is to make sure you only add in the amount of mashed up bananas that the recipe calls for. Sounds like you are not measuring properly to many bananas will make it gummy.

How can I make my bread fluffier instead of dense? ›

Add Sugar

Adding sugar weakens the gluten structure, absorbs water, and eventually makes the bread lighter and softer. As a result, sugar improves the bread's taste, structure and texture. Yeast also eats up sugar to produce carbon dioxide, which raises the dough and makes bread fluffy.

Can you leave freshly baked banana bread out overnight? ›

If you're planning to eat your banana bread within three to four days, it can be left out at room temperature. To keep it fresh, place a paper towel in the bottom of an airtight container. Place the loaf of banana bread on top, add another paper towel, and put the lid on the container.

Should I take banana bread out of pan to cool? ›

Bake until golden brown and a toothpick inserted into the center comes out clean or a digital thermometer inserted into the center reads 200-205°F, about 55 to 65 minutes. Cool in the pan on a cooling rack for 15 minutes before removing the loaf from the pan to finish cooling completely.
