INSTRUCTIONS FOR EASY VEGAN BECHAMEL SAUCERECIPE

To start making my bechamel sauce, you’ll want to melt vegan butter in a medium pot over medium heat. Then, whisk in flour. You should begin to have a thick paste. Continue to cook, whisking constantly for 2 minutes to cook out the flour flavour.

Reduce heat to low and slowly whisk in 1 cup soy milk until well combined. Add the onion powder, salt, and ground nutmeg. Add remaining soy milk, 1 cup at a time, whisking constantly until the sauce is free of lumps. Then, increase heat back to medium and continue whisking sauce until it thickens, about 5 mins.

If you are using vegan parmesan or nutritional yeast (optional), add it in now, remove from heat, and whisk until melted. Taste & season with salt and pepper.

Voila! A Creamy Vegan Bechamel Sauce!

NOTES: If you want a thicker bechamel, whisk together 1 tbsp cornstarch with 1 tbsp water and add to the boiling bechamel, whisking constantly until thickened.

FAQs

Is lasagne white sauce the same as béchamel sauce? ›

Béchamel (also known as white sauce) is the basic sauce known as the “mother sauce”. It's used across many cuisines, you may know it best as a component of lasagne. Béchamel begins with a blonde roux, which is butter and flour cooked together until straw in colour. Milk is added to turn it into a rich sauce.

What is the basic formula for béchamel sauce? ›

The basic ratio for a classic béchamel is 3 ounces of fat (butter, ghee, coconut oil) to 3 ounces of all-purpose flour for the roux. This ratio of roux will thicken up to a quart of milk, but you can use less milk for a thicker sauce, as we do below.

What is a good substitute for béchamel sauce? ›

With a lovely creamy texture, cream cheese is a great bechamel alternative, as it's stable and won't split. It has a slightly tangy flavour, so it won't taste like a traditional bechamel – try flavouring with parmesan, chopped chives or a pinch of ground nutmeg.

Made with butter, flour, and milk, it's very simple and yes, just those three ingredients but I add different ingredients to it, such as salt, herbs, pepper, cheese etc. The ratio I use is as follows: 1 part butter: 1 part flour: 10 parts milk. For example, 100g butter, 100g flour, 1L (1000ml) milk.

What is the English name for béchamel sauce? ›

Béchamel sauce (pronounced /beɪʃəˈmɛl/ in English, IPA: [beʃaˈmɛl] in French, IPA: [beʃaˈmɛlla] in Italian), also known as white sauce, is a basic mother sauce. It can be used to make other sauces, such as Mornay sauce, which is Béchamel and cheese.

Why does my béchamel sauce separate in the oven? ›

This happens when there's too much fat or liquid in the mixture. This can happen when there are not enough emulsifiers (which help keep your ingredients together). Sauces are usually made from multiple ingredients that include both oil and water. Oils and water will naturally separate.

Why does my béchamel sauce taste like flour? ›

If your sauce tastes floury, the flour has not been cooked enough or you haven't added enough liquid to permit the flour to fully hydrate and gel. I cook my flour in butter or olive oil to make a lightly colored paste, then gradually add liquid while whisking constantly to avoid creating lumps.
