Eggless dates muffins recipe – easy and healthy eggless muffins using whole wheat flour or atta along with dates. These soft and delicious dates muffins are made without eggs or butter. Also, they are loaded with the goodness of dates or khajoor.

Inspite of dates being healthy, I am not too fond of eating dates by themselves. Instead I look for ways to incorporate it in my diet in the form of peanut and dates ladoo or as a simple dates milkshake.

For a long time, I have been thinking of using dates in a baked goodie. Finally I made this dates muffins a couple of days back.

As a matter of fact, I recently switched to using only whole wheat flour for cakes and cookies instead of all-purpose flour or maida. So I used atta for these muffins too. Although they are made from whole wheat flour, these muffins are soft and delicious and you can never guess that healthy dates are hidden in these muffins. Additionally, its a good snack for kids too.

Dates are rich in dietary fiber and they are a good source of iron, calcium and potassium. Whole wheat flour or atta too is rich in dietary fiber. Lets move on to the recipe for easy eggless dates muffins.

How to make Eggless Dates Muffins step by step

  1. De-seed and roughly chop the dates.

  2. Soak the chopped dates in hot milk for half an hour.

  3. Then blend the dates with little of the soaked milk in a blender or mixer till the dates turn into a smooth paste.

  4. Pre-heat the oven to 180 deg C.
  5. Meanwhile, spoon the whole wheat flour into a dry measuring cup and level off. Sift whole wheat flour, baking powder, baking soda and salt together twice in a large bowl.

  6. In another bowl, whisk together the sugar and oil till they are blended. Then add ground dates paste and vanilla essence. Also, add the remaining milk that was soaked with the dates and whisk again till smooth.

  7. Add the dry ingredients into the bowl.

  8. Gently fold the batter to combine.

  9. Spoon batter into the prepared muffin pan.

  10. Finally, bake the muffins for around 20 minutes or once a toothpick inserted in a muffin comes out clean. Cool them on a wire rack.
  11. Eggless whole wheat dates muffins are ready to be served.

Ingredients

  • 1 cup whole wheat flour ( atta )
  • 1/2 cup chopped dates ( khajoor )
  • 1/4 cup granulated sugar ( or raw cane sugar )
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk
  • 1/2 tsp vanilla essence
  • 1/4 cup vegetable oil

Instructions

  1. De-seed and roughly chop the dates.
  2. Soak the chopped dates in hot milk for half an hour.
  3. Then blend the dates with little of the soaked milk in a blender or mixer till the dates turn into a smooth paste, retaining the remaining milk to be used later.
  4. Pre-heat the oven to 180 deg C / 350 deg F.
  5. Meanwhile, spoon the whole wheat flour into a dry measuring cup and level off.
  6. Sift whole wheat flour, baking powder, baking soda and salt together twice in a large bowl.
  7. In another bowl, whisk together the sugar and oil till they are blended.
  8. Then add the ground dates paste and vanilla essence along with the remaining milk that was soaked with the dates and whisk again till smooth.
  9. Add the dry ingredients into the bowl and gently fold the batter to combine.
  10. Grease a muffin pan with oil or alternatively line with paper cups.
  11. Spoon batter into the prepared muffin pan.
  12. Bake the muffins for around 20 minutes or until a toothpick inserted in a muffin comes out clean.
  13. Cool them on a wire rack.
  14. Eggless dates muffins are ready to be served.

Notes

  • I used sunflower oil in this recipe. Use any neutral-flavored oil.
  • The measurement in this recipe is 1 cup = 250 ml.

    Hi, I have only cold pressed mustard oil at present. It’s almost odorless. Can I use that? Also, can I substitute milk with plain water?

      I suggest you not to use mustard oil as it may impart its flavor to the muffins. As for substituting milk with water, I haven’t tried it and also you will miss out the flavor of the muffin. But if you want to replace milk with water, you can do so but just add extra 1 tbsp of oil.
