Peanut Butter Gooey Butter Cake is just freaking awesome. It starts with a dense chocolate cake crust then gets topped with a gooey, rich peanut butter layer. You're never gonna want to eat anything else. Ever.

Sometimes beauty is overrated. Sure, it's nice for things to look nice. And yes, I believe in art for art's sake. Being surrounded by beauty can lift your mood and raise your vibration, but it can also sometimes be an empty facade. Pop culture teaches us that beauty correlates to goodness. I'm not sure that's a great way to think.

As a kitchen witch, I know that beauty standards certainly don't hold up. No matter how beautifully presented a plate of food is, if it doesn't taste good, nobody wants it. But something can be hideous to behold, and if the flavors are on point, everyone wants it. It's substance over style all the way. I think that applies across the board.

What makes cake so awesome?

This Peanut Butter Gooey Butter Cake is not much to look at, but my goodness it's a joy to eat. If you're a chocolate peanut butter fan, you won't be able to get enough of this one. It starts with a thick chocolate base that falls somewhere between shortbread and cake in the texture department. The gooey top is flavored with peanut butter, and it just holds together and stays ridiculously moist.

This cake is sweet and indulgent. It's also super easy to make. It starts with a cake mix, it's single layer, and it requires no icing or decorating. You could dust it with powdered sugar or drizzle on some hot chocolate sauce, but it doesn't really need it. That' really just to make it look prettier, and we've already established that beauty is overrated. This cake just wants to make you happy by being eaten as quickly as possible.

Tips for Making Peanut Butter Gooey Butter Cake

Gooey butter cakes are super easy. They start with a cake mix and use a lot of butter and powdered sugar. It's gonna be fine. Start by mixing together a box of chocolate cake mix with a stick of melted butter and an egg. You'll have quite a stiff mixture that you can then press into the base of a 13x9 inch baking pan.

Then in the same mixing bowl (no need to wash it), mix together softened cream cheese and peanut butter until smooth. Then beat in 3 eggs, followed by another stick of melted butter (it's fine) and (so sorry) a whole pound of powdered sugar. Once this is well combined, pour it on top of your base layer, then bake for about 40 minutes. The center will still be a bit wobbly. That's exactly what you want. Let it cool a bit before digging in.

What other flavors of gooey butter cake can I make?

Besides a plain gooey butter cake, you can go for double chocolate, pumpkin, lemon, strawberry, just about anything you can imagine. If there's a cake mix, you cane turn it into gooey butter cake.

Ingredients

For the cake layer

  • 1 package devil's food cake mix
  • 1 egg
  • 1 stick (4 ounces) butter, melted

For the filling

  • 8 ounces cream cheese, softened
  • 1 cup creamy peanut butter
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 stick (4 ounces) butter, melted
  • 16 ounces powdered sugar

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Beat together cake mix, egg, and melted butter for the cake layer in a large mixing bowl with an electric mixer. Mix briefly until everything is moistened and starts to stick together.
  3. Press the cake layer into the bottom of a 13x9 inch baking pan. Set aside.
  4. For the filling, beat together cream cheese and peanut butter in a large mixing bowl with an electric mixer until smooth. Beat in the eggs one at a time, followed by the vanilla. Scrape the sides of the bowl and mix again until smooth.
  5. Mix in the melted butter until smooth, and then turn your mixer down to low and slowly add the powdered sugar. Mix until smooth.
  6. Pour the filling over the cake layer. Bake for 40 minutes. The center should still be a little wiggly.
  7. Allow the cake to cool before serving.
