This Artichoke Chicken recipe is a creamy and dreamy, one dish wonder. If you love artichokes, there is no doubt you will enjoy this dinner. It takes the tangy artichokes and combines them with green chiles, parmesan and green chiles for a dish full of flavor. This recipe is naturally gluten free and low carb and most importantly completely delicious! There are many ways you can serve this for whatever your family likes to eat.

You know what is not fair? My husband and kids want to eat dinner… EVERY DAY. I mean if I could make dinner like once or twice a week like taking out the trash, then that is doable, but some days it just seems like SO.MUCH.WORK. to figure out what to make, buy all the things, make all the things, then just when you think you are done you have to clean up all the things. Not fair, right?!

I like to cook, I really do, but in the midst of a busy week usually my saving grace are these one dish easy chicken bake recipes like this Artichoke Chicken recipe. They make cooking dinner quick, easy and delicious. Plus as a bonus, you can use the leftovers to make all sorts of other meals to eat through-out the week.

What is great about this dish is that it is so creamy and comforting. The parmesan makes it perfectly rich, without the whole dish being too indulgent and the green chiles give it something just a little unexpected, like a tangy twist, that keeps it interesting. Artichoke Chicken can be served many different ways so that no matter what your family likes (or your kids will eat today) you can find a great side to pair it with to make everyone happy.

How to Serve Artichoke Chicken

I just love creamy dishes and one of the best parts are that they pair well with so many things. The Artichoke Chicken is super tender and as it bakes the cheese and veggies combine to make a really amazing sauce that I think make this extra good when served over things so you can share the deliciousness of the sauce with even more food. Here are some of my favorites:

  • Over rice- I used wild rice here
  • On top of a baked potato or sweet potato
  • With (or on) a large piece of garlic toast
  • On top of pasta

Low Carb Serving Options:

There are quite a few really great options for serving if you are trying to keep things lower carb, or just looking to pair this with some healthy options for a full dinner. You can pick one or pair with any of the ideas above.

  • On top of sautéed spinach (or other greens) as shown here
  • With roasted or riced cauliflower
  • With pan or oven roasted veggies like green beans or brussel sprouts
  • With a side salad

Artichoke Chicken Recipe

In this section I will walk through the recipe in detail so that I can share my tips, tricks and preferences when making this recipe. If you have questions, there is a good chance I will answer them in this section. If you just want the quick version of the recipe, you can scroll right down to the bottom of this post where I have a full printable recipe card.

Ingredients

  • 4 boneless, skinless chicken breasts-This will be about 1.5-2 lbs usually. If they are extra thick I like to butterfly them (cut in half lengthwise) so they will cook more quickly and evenly.
  • 1 can artichoke hearts (14 oz), drained and chopped- Artichokes are usually found either in the canned vegetable section, or near the pickles and olives at the grocery store. They generally sell them in a few varieties of different cuts and marinated or not. The chop won’t matter since you are going to chop them additionally anyway. As for marinated,I don’t use marinated artichoke hearts, but since they are drained it won’t make much difference taste wise if that is what you find.
  • 1 can green chiles (4.5 oz)-I prefer the Old El Paso brand since they are more crushed which I think delivers better flavor when they are mixed in. If you have never had green chiles, they are mild and so this dish will not be spicy.
  • 8 oz cream cheese, softened-I use regular Philadelphia cream cheese, but you can also sub light in the recipe. My only recommendation is that you don’t use fat-free since it doesn’t melt the same.
  • 12 oz parmesan cheese, divided-It is important to use the fresh grated kind of parmesan, not the powdered type.
  • 1 tsp garlic powder

Optional:

  • Parsley for garnish

Instructions

  1. Preheat oven to 375˚F.
  2. Mix the artichokes, green chiles, cream cheese, 1 cup of the parmesan cheese, and garlic powder together until combined. Make sure the cream cheese is nice and soft before you mix, otherwise it will not combine well. If you forget to get it out of the fridge you can pop it in a microwavable safe bowl and put it in the microwave for 30 seconds then mix and heat it for 15 more seconds until it is soft and smooth.
  3. Lay the chicken breasts flat in a large baking dish then spread the artichoke mixture over the top of the chicken. Sprinkle the remaining cheese over the top. If you want you can cut the chicken into halves or thirds before baking. This makes it a little easier to serve if your family doesn’t eat a whole chicken breast for a serving. If you do choose to cut it, the cooking time will probably be reduced so keep an eye on it!
  4. Bake for 35-45 minutes or until the chicken is cooked through which is an 165˚F internal temperature. I bake my chicken on the middle rack of the oven. I also don’t cover the dish while it bakes so any extra liquid can bake off. I have never had trouble with the cheese getting to browned, but since every oven bakes differently, if you feel like the top is getting more brown than you like, you can loosely cover it with foil for the remaining cook time. Or if the top isn’t brown enough at the end, you can change the temp to broil for an extra 1-3 minutes or until it is perfect!
  5. Garnish with parsley and serve hot. Enjoy!

Notes

  • You can cut the chicken in half, chunks, or use chicken tenderloins in lieu of full chicken breasts to make serving easier. Cooking time may be reduced.
  • Leftovers can be stored in the refrigerator in an air tight container. The chicken reheats well, or can be shredded and used for another meal like artichoke flat bread, on top of a salad, or in a pita with lettuce and tomato.
