Creamy Tuscan chicken is the perfect weeknight dinner recipe since it’s easy to make, comes together quickly and is made using one pan. Classic Italian flavors of sundried tomatoes, garlic and parmesan cheese are combined with spinach and chicken breasts to make up this creamy low carb dish. It’s delicious served just as it is made, but you should try it over cauliflower rice or zucchini noodles for a complete meal even your kids will love!

Creamy Keto Tuscan Chicken Ingredients
- 2 skinless boneless chicken breasts
- 2 tablespoons lemon-pepper seasoning
- 1 teaspoon salt
- 2 tablespoons extra virgin olive oil
- 1/2 medium size onion, diced
- 1/2 cup chicken broth or chicken stock
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh basil (juilienned)
- 2 cups baby spinach
- 5 sun-dried tomatoes, cut into julienne strips
- 1 teaspoon arrowroot powder (optional)

Season chicken
Season the chicken breast with the lemon-pepper and salt on both side.

Pan fry chicken
In a large skillet, add the olive oil and cook the chicken over medium heat, turning once (about 10-12 minutes per side). May need to cover the skillet if you have thick chicken breast. Heat until internal temperature of chicken is 165 degrees. Remove chicken from the skillet and set aside.

Make the cream sauce
Add onions to the skillet and sauté until translucent, 3-5 minutes. Add garlic and cook until fragrant, about 1 minute. Pour in the chicken broth, cream, Parmesan cheese and basil. Continue to stir until cheese has melted. Stir in arrowroot powder if using to thicken up the mixture. Reduce heat to low and simmer.

Sun dried tomatoes contain carbs. One strip of sun dried tomato has about 0.5 grams net carbs in it. These carbs can add up quickly so we don’t add too much to this one pot wonder. But really, you don’t need too many anyway to get that rich, intense tomato flavor in the dish. It’s the best way to get ultimate tomato tangy flavor without sacrificing carb.
Is lemon pepper necessary?
If you can’t locate the lemon-pepper seasoning or don’t have any on hand, just omit it. I would use black pepper in it’s place or dust with additional garlic powder. The lemon pepper adds acidity to balance out the cream and saltiness of the recipe.

I would keep the arrowroot powder amount the same (1 teaspoon) but you should be able to just double all the other ingredients.

So I’m not a fan of the OG Tuscan Chicken…this is so much better!!! I doubled everything but left out the arrowroot bc it didn’t really need any thickening once I added the cheese. So easy and I put this over some cauliflower rice and made a side of lemon broccoli, def a keeper!

This was delicious! I did make a mistake and grabbed a jar of ‘roasted red peppers’ instead of sun dried tomatoes at the grocery. Not sure how that happened bc i wrote sun dried tomates on my list. Didn’t even realize til I opened the jar! Thought I ruined it. But everyone loved it!!
