It might have something to do with the lazy days of summer…
..but those lazy days are winding down more quickly than I would like.

Now, let’s get back to breakfast, the most important meal of the day.
While I’ve been known to rush through or skip out on breakfast entirely, I like to send my kiddo to school with a full belly. Because I know if I don’t, he might not eat much of anything until dismissal time. (He’s a picky eater and a talker at lunch, so there are many days when he comes home with a full lunchbox.)
Thankfully, my kid is a breakfast eater, but he likes variety. And I like to deliver.
But Mama doesn’t always have time to whip up a batch of homemade waffles or scramble an egg in the morning. So, I like to have some quick-fix and make-ahead recipes in my arsenal.

It’s a tasty alternative to pancakes or waffles, plus it’s quick to make and has a protein boost. And it tastes like candy.
Brach’s Maple Nut Goodies!
Here’s how you make it:
Slather a piece of toast with crunchy or smooth peanut butter or the nut butter of your choice. Then top it with hot pure maple syrup! The candy garnish is optional — and certainly not recommended for kids! (But it makes for a pretty blog photo!)
Not much of a recipe, I know, but it’s a quick-fix on a busy morning. And I’ve found it will hush those pleas for homemade waffles or pancakes that I hear some weekday mornings!
